Ingredients:

1 oz Sotol

½ oz rhum

1 oz shiso-infused vodka

1 oz apple juice

½ oz lemon juice

2 oz whole milk

Directions:

Combine all ingredients in a shaker without ice. Let sit for 1 minute to curdle. Fine strain through a coffee filter or cheesecloth. Pour the clarified liquid over a large cube in a rocks glass.

Delicate, earthy, and crisp—like walking through an orchard after rain.
