Ingredients:
• 1 oz Supergay Fire Island Dry Gin
• 0.5 oz Fresh Lemon Juice
• 0.5 oz Chamomile-Honey Syrup (1:1 honey and warm water steeped with dried chamomile)
• 2 dashes saline solution (4:1 water to salt)
• Top: Dry sparkling wine or pét-nat
• Garnish: Kelp ribbon or lemon twist
Instructions:
1. Shake gin, lemon, syrup, and saline with ice.
2. Strain into a chilled flute.
3. Top with sparkling wine.
